Preparing Perfect Pasta

Follow the package directions to ensure that enough water is used for cooking the pasta. Add the pasta to the boiling water and cook until al dente (tender but still a little firm to the bite), stirring frequently. To prevent pasta from sticking, add it slowly to plenty of boiling water and stir frequently while cooking. Adding oil to the cooking water is not recommended because some sauces may not cling to pasta coated with oil.

Like many other reviewers, I made a few modifications to the recipe and it turned out great. First, I only made half and there were 3 good size servings. I used fresh baby spinach, which I sauteed with olive oil, garlic, onion, salt and pepper while the pasta was cooking. I had read that the dish was dry, so I used twice the cream cheese (used 1/3 less fat) and omitted the egg. I also used some of the pasta water to loosen the sauce a little. Finally, I topped it with good quality Parmaggiano Reggiano Cheese. It was delicious, if a little on the rich side, whoever said it was like spinach dip pasta was absolutely right!

I made this last night for my family because it sounded nice and cheesy and my grandkids love cheesy pasta...I omitted the spinach, and topped instead with grilled chicked. Since there were no seasonings listed in the recipe I added seasoned salt and garlic, amust in all my dishes..It turned out good, but a little dryer than I expected..I think the eggs made the creaminess congeal a bit. Next time I will omit the eggs and use the entire crean cheese block, and mayby a touch of milk or cream to keep it creamy. None the less, my family gobbled it up! I will definately make again.

Rated 4 out of 5 by from Due to many stating this recipe was dry. Due to many stating this recipe was dry. I changed the recipe a little.. I put in about 6 oz.cream cheese and 2 cups of cottage cheese. It was not dry at all. I also added about 1/2 cup of chopped onion and 1 tsp. of minced garlic when I was cooking the spinach. I also added about 2 tsp. of Italian Seasoning to the spinach mixture, after it was cooked.. It was good, even my husband, who doesn't like spinach, ate a good size amount. He even took the leftovers for lunch the next day.

Maybe just one egg, not two. I added salt, pepper, garlic, garlic powder, and a bit of garlic salt, so it wasn't bland, but it was still boring tasking to me. Think it could use some chicken and mushrooms, or maybe bacon to complete the flavor. A good base recipe I'll try it again with meat, and my boyfriend loved it!

Rated 4 out of 5 by from There have been lots of comments on this being bland and they are RIGHT! There have been lots of comments on this being bland and they are RIGHT! surprisingly it is INCREDIBLY bland! I think adding 1/2-1 teaspoon salt to the cheese mixture would do wonders for this dish. However, it still rates very high and I would make it again. My children, who don't eat anything w/ enthusiasm, gobbled this up. It was like a mac and cheese to them and I liked it b/c they ate the spinach w/o a second thought.

After reading all the reviews I came to the conclusion that it would be bland and dry, so I changed it up a bit. I put a whole pkg of cream cheese and 2 spoonfuls of sour cream. I also added fresh parsley, cilantro, garlic, and some other dry Italian seasonings. It came out beautiful and delicious. My husband loved it. I never go by seasoning measurements in recipes, I always go by taste.

Rated 5 out of 5 by from I LOVED this recipe! I LOVED this recipe!! I did make some changes though. I used 8oz of cream cheese, 15oz of Ricotta cheese instead of cottage, I added 2 chicken breasts as well. It also didn't call for any spice so I added 1 t. of Italian Dressing season mix and a heaping spoonful of minced garlic. I feed 4 adults and a 4 year old and still had left overs!! WILL DEF MAKE IT AGAIN!
