  • Heat oven to 350ºF.
  • Combine flour, dry pudding mix, baking powder, salt and 1 tsp. cinnamon in large bowl.
  • Beat 1 egg, 1/4 cup milk, 2 Tbsp. sugar and remaining cinnamon in medium bowl with whisk until blended. Add bread; stir until evenly moistened.
  • Whisk remaining egg in separate medium bowl. Add butter, remaining milk and sugar; mix well. Add to dry ingredients; stir just until moistened. (Batter will be lumpy.)
  • Spoon batter into 12 muffin pan cups sprayed with cooking spray. Top with bread mixture; press lightly into batter with back of spoon.
  • Bake 28 min. or until toothpick inserted in centers comes out clean. Brush with syrup. Cool in pan 5 min. Remove to wire rack; cool slightly.

Rated 5 out of 5 by from Tasty treat Delicious flavor! Reduced sugar to 1/2c + 2Tbl and added 1 tsp. vanilla. Syrup on top added the right flavor but it was super sticky for little fingers. Even with heavily sprayed muffin pans, difficult to remove muffins in one piece. Will use parchment liners next time. Just used 2 bowls; made a well in dry ingredients, add egg and stirred, whisk in rest of wet ingredients, no lumps! Next batch will add chopped nuts or dried fruit.

Rated 5 out of 5 by from Very good and easy I made these the other day, I took them out of the oven and brushed maple syrup over them and then baked them for an additional 2 minutes-this made the syrup caramelize. Will make these again for sure!

Rated 5 out of 5 by from Delicious! I followed directions except I added 1/2 tspn pure vanilla extract to the wet batter ingredients. Baked 14 min in non-stick pan (still greased with butter) spun the pan and baked another 14 min. My oven does not bake evenly. Brushed top with real maple syrup, baked 5 minutes as previous reviewer suggested. Since it was a non-stick tin and greased, I just had to give the pan a shake and they all came right out. These were still really great a few days later when I warmed them up with butter! Yum!
