  • Add remaining ingredients; mix lightly.

Substitute

I used egg noodles and cooked the beans with the noodles for a full 10 minutes to get rid of the earthy taste fresh beans can have and it showcased their fresh flavor. It was a wonderful side dish to our dinner and a great left-over main course lunch for me!

I used a mix of green beans and wax beans, and used halved grape tomatoes from the farmers' market instead of chopping up a large tomato. My beans were rather thick, so I cooked them with the pasta for 5 minutes. I also tossed in some fresh parsley since I had it on hand.

When the garden is full of green peppers, one CAN swap out the green peppers, finely chopped, (not cooked in any way) instead of green beans. It's even BETTER that way, imo.
