Ask the butcher to butterfly the pork tenderloin for you. Or, cut the tenderloin lengthwise in half, leaving about 1/2 inch intact. Cover with plastic wrap or place in a resealable plastic bag. Using a meat mallet or can, pound meat to 1/2-inch thickness.
Substitute 3 cups sliced drained canned or jarred mangos for the cut-up fresh mangos.

This recipe was unbelievable! Full of flavor -it was like eating at a fancy restaurant!
My advice: Be sure to review how to butterfly your tenderloin before getting elbow-deep in raw meat! I thought there was too much stuffing, but once I cut the meat right it fit perfectly.
This is definitely a keeper!
Make sure the Mango is RIPE and for ease use a potato peeler much less trouble
