Hardly any of it was left when it was time for me to go home. I had to make another batch of this recipe for a family Easter dinner. I didn't have any more mandarin oranges, so I peeled and sectioned a naval orange and then cut each orange section in half. That work out very well.

Rated 5 out of 5 by from This was GREAT! This was GREAT! Even my 19 month old loved it. I used a 20 oz can of crushed pineapple instead of fresh. Also substituting strawberries instead of the oranges is good. It makes it less sweet. I also added walnuts, which made it excellent.

Rated 5 out of 5 by from I have been looking for this recipe for a long time. I have been looking for this recipe for a long time. It is more like old fashioned ambrosia which my mother made when I was growing up in the 40's except the coconut wasn't toasted. This is definitely southern ambrosia.

Only change I made was to add a cup of sour cream reduced fat. Made it creamy and more like the traditional ambrosia.
