  • Blend first 5 ingredients in blender until smooth; set aside.
  • Heat oil in large saucepan on medium heat. Add rice and onions; cook and stir 3 min. Stir in herb puree. Bring to boil; cover. Simmer on low heat 20 min. or until liquid is absorbed; cool 5 min.
  • Fluff rice with fork. Stir in tomatoes; top with cheese.

Substitute

Substitute 4 chopped plum tomatoes for the grape tomatoes.

Make Ahead

Prepare rice mixture as directed, but do not top with cheese. Cool to room temperature. Top with cheese just before serving.

    Disappointing lack of flavor.

    This was a great side dish for fish! I used about 1/2 of the onion though, other than that, I stuck to the recipe and we loved it!!
