What You Need

cups water

cup fresh cilantro

cup fresh parsley

cloves garlic

 chicken bouillon cube

Tbsp. oil

cups long-grain white rice, uncooked

small onion, chopped

cups grape tomatoes, cut in half

cup KRAFT Authentic Mexican Style Finely Shredded Cheeses

Make It

BLEND first 5 ingredients in blender until smooth; set aside.

HEAT oil in large saucepan on medium heat. Add rice and onions; cook and stir 3 min. Stir in herb puree. Bring to boil; cover. Simmer on low heat 20 min. or until liquid is absorbed; cool 5 min.

FLUFF rice with fork. Stir in tomatoes; top with cheese.

Substitute
Substitute 4 chopped plum tomatoes for the grape tomatoes.
Make Ahead
Prepare rice mixture as directed, but do not top with cheese. Cool to room temperature. Top with cheese just before serving.
