    it surprised me how a recipe so simple and quick could be so full of flavor. I was going to have it with my grilled chicken breast but ultimately I decided to chop it up and add it to the mix.

    My husband and I enjoyed this recipe! We used cream of chicken instead of cream of mushroom. Good mix with the velveeta not over powering or to cheesy. I topped it over chicken and he cut up the chicken and mixed it all together.

    A tastey, healthy and colorful dish. I get to eat various kinds of veggies in one pot, and it also allows me to throw in all the left over veggies or whatever I have in the fridge.
