  • Cook cauliflower in saucepan of boiling water 4 to 5 min. or just until tender; drain. Cool slightly.
  • Meanwhile, line shallow pan with paper towels; top with wire rack. Combine cheese, flour, Italian seasoning and red pepper. Whisk eggs and water in medium bowl until blended. Add cheese mixture; mix well.
  • Heat oil in large deep skillet on medium heat to 350°F. Dip cauliflower, in batches, into cheese mixture, turning to evenly coat all sides of each floret. Add to oil; cook 4 to 5 min. or until golden brown. Remove from oil with slotted spoon; drain on wire rack. Serve warm.

Variation

Substitute frozen cauliflower florets, cooked as directed on package, for the cooked fresh cauliflower.
