  • Heat oven to 350°F.
  • Cook and stir vegetables in 10-inch ovenproof skillet on medium-high heat 3 min. or until crisp-tender.
  • Whisk eggs and water until blended. Place cream cheese over vegetables in skillet; cover with eggs.
  • Bake 30 min. or until frittata is puffed and golden brown.

Variation

If you don't have an ovenproof skillet, cook vegetables in regular skillet as directed. Whisk eggs and water in medium bowl until blended. Add vegetables and cream cheese; mix well. Pour into 9-inch pie plate sprayed with cooking spray. Bake as directed.

Even my husband who is not a big fan of asparagus likes it. Frittatas are always made in our house to use up leftover veggies and such. But this one takes the cake

I added garlic salt in addition to shredded carrots and asparagus (my family doesn't like peppers). Also added shredded cheese to the top. It takes way longer for it to bake than 30 minutes. I did however add one more egg since my pie plate is 10".

It was our first frittata, but definately not our last! There were no leftovers and even my 4 year old twins were begging for more when it was gone!
