  • Prepare cake batter and bake as directed on package for 24 cupcakes; cool 10 minutes.
  • Meanwhile, measure 1/4 cup of the dry gelatin into small bowl. Stir in 1/2 cup of the boiling water 2 minutes until completely dissolved. Add cold water. Cut small "X" in center of each cupcake with sharp knife. Carefully pour gelatin evenly over cupcakes. Refrigerate at least 30 minutes. Meanwhile, stir remaining 1/4 cup boiling water into remaining dry gelatin in small bowl 2 minutes until completely dissolved. Cool.
  • Beat butter in large bowl with electric mixer on medium speed until creamy. Gradually add sugar alternately with the gelatin, beating until well blended after each addition. (Add a small amount of hot water if the frosting is too stiff.) Spread frosting onto cupcakes. Store in refrigerator.

Rated 3 out of 5 by from Pretty good recipe. Pretty good recipe. They can get a little soggy if you pour alot of jello mixture on them. I took a tablespoon and dripped that amount on each cupcake and it seemed to work out ok. I did strawberry jello for red inside and died a regular tub of frosting blue to make red, white and blue cupcakes (or "Giants" cupcakes for Superbowl). The nice thing is you can really do any color combo here and just die white tub frosting to save time.

Rated 3 out of 5 by from I had a hard time with these. I had a hard time with these. I didn't know if I should poke a hole all the way to the bottom or just half way. When I bit into it i realized that you really have to get the jello right into the hole instead of my trying to pour it over the top. The jello just didn't make it all the way through. I am sure knowing this I will have better luck next time.

Rated 1 out of 5 by from When I poured the jello over the top it just rolled off and into the muffin tin. When I poured the jello over the top it just rolled off and into the muffin tin. I finally ended up taking a tablespoon and squeezing the cupcake to put the jello into the hole. Too much work and I have to take this to my sons class...I wish I had read the other reviews before I made these.

Rated 4 out of 5 by from I like that the receipe can be adapted for many holidays. I like that the receipe can be adapted for many holidays. I did find that I needed to made a much larger hole to pour the jello into the cupcake (I actually poked my finger into the cupcake) Be careful not to overfill or the bottoms of the cupcakes get very sitcky (even with cupcake tins)

Not even my kids would eat it after one taste and they usually eat anything sweet!! Oh well, maybe I will have better luck with a different recipe!!!

It ran & made a mess on the cupcake papers. Once they were made they were delicious. I will definitely make these again & also use different flavors of gelatin.
