What You Need

tub (8 oz.) COOL WHIP Whipped Topping, thawed

pt. (2 cups) vanilla ice cream, softened

pkg. (3 oz.) JELL-O Peach Flavor Gelatin

cups prepared pound cake cubes

1/4

cup raspberry preserves

small fresh peach slices

fresh raspberries

Make It

MIX COOL WHIP, ice cream and dry gelatin mix in large bowl until well blended. Stir in cake; spoon into 8-inch square pan.

FREEZE 3 hours or until firm.

DRIZZLE with raspberry preserves. Serve topped with fruit.

Variation

Prepare as directed, using COOL WHIP LITE Whipped Topping, low-fat ice cream, JELL-O Peach Sugar Free Gelatin and reduced-fat pound cake.

How to Thaw COOL WHIP

Place unopened 8 oz. tub in refrigerator for 4 hours. Do not thaw in microwave.

Special Extra

Garnish each serving with a sprig of fresh mint.

I made this along with the Updated Shepherd's Pie. This was so easy to make and delicious. The only thing is, it was hard to put your fork through the frozen cake.

This is a GREAT no cook dessert to finish off a summer BBQ! We didn't use the raspberry preserves but were thinking it would be just as great with strawberry Jell-o drizzled with strawberry preserves. Yummy!

One of my dinner guests loved this so much that he thought I bought it from a gourmet store. I personally didn't like the peach flavor (maybe because I used nonsugar Jello mix). I would make this with a different flavor.

It was a wonderful dessert. I could have easily made a double batch and it would have been gone quickly. Very easy!

This recipe is a great summer treat! So easy to make- and I even used sugar free jello, & no sugar added ice cream. Everyone wanted seconds!
