  • Mix ice cream and dry gelatin mix in large bowl until blended. Stir in COOL WHIP, then cake cubes. Spoon into 8-inch square pan; drizzle with preserves.
  • Freeze 3 hours or until firm.
  • Serve topped with fruit.

Variation

Prepare using light vanilla ice cream, 1 pkg. (0.3 oz.) JELL-O Peach Flavor Sugar Free Gelatin, COOL WHIP LITE Whipped Topping and reduced-fat pound cake.

Special Extra

For easy cleanup, line baking pan with foil using this easy method.  Turn pan upside down and fit a piece of foil over top of pan, smoothing corners as needed.  Remove foil.  When you turn the pan over, the foil fits perfectly inside the pan.

How to Thaw COOL WHIP

Place unopened 8-oz. tub of COOL WHIP in refrigerator for 4 hours. Do not thaw in the microwave.

I substituted the pound cake for a graham crust on the bottom, and added diced peaches, mango and raspberries to the mixture. Also substituted the rasberries preserves for some caramel sauce. A HUGE hit for my family. Also, try substituting frozen yogurt or lowfat icecream w/ the lowfat coolwhip, sugar free jello, etc to make this a low fat, low sugar dessert.

This is my second time making this delicious recipe and everyone who tastes it loves it. I cannot believe how easy it is, and just the right amount of everything. I am excited to try different flavors of Jell-O now. I would reccomend anyone this recipe at least once. It is not at all expensive to make and so refreshing.

One of my dinner guests loved this so much that he thought I bought it from a gourmet store. I personally didn't like the peach flavor (maybe because I used nonsugar Jello mix). I would make this with a different flavor.
