  • Beat cream cheese spread, peanut butter and sugar in large bowl with mixer until blended. Add COOL WHIP; mix well.
  • Spread caramel topping onto bottom of crust; cover with cream cheese mixture. Freeze 4 hours or until firm.
  • Top with nuts just before serving. Melt chocolate as directed on package; drizzle over pie.

    I more or less made the recipe. I was unwilling to use my pecan stash in this since the delicate flavor of the pecans would be overwhelmed by the peanut butter flavor of the filling. However since the peanut butter was there, I opted to make a Tin Roof pie (i.e. substituted chopped dry roast peanuts, the bit of salty went wonderfully with the caramel. Also, no Oreo crust on hand, and didn't have transport to grocery store the day I wanted to make it. But I remembered something done in a different pie recipe I have. I made a graham cracker crust. Then melted 3 ounces of semisweet chocolate with 1 teaspoon shortening (butter also works). I spread this over the crust and popped it into the refrigerator to set completely before finishing filling the pie. When all is said & done all I have to say is, "Yum!"

    I made this pie for my husband for fathers day and then for my mothers birthday and then my fathers birthday all with in 7 days time. It is extreamly easy and addictive. I didnt use the cream cheese spread in the tub, the regular cream cheese works just fine. Just make sure you let it get close to room temp. Enjoy!
