  • Preheat oven to 350°F. Grease and flour 10-inch tube or fluted tube pan; set aside. Place all ingredients in large bowl. Beat with electric mixer on medium speed 3 minutes or until well blended.
  • Pour into prepared pan.
  • Bake 50 to 55 minutes or until cake springs back when lightly pressed with finger. Cool 15 minutes; remove from pan. Cool completely on wire rack.

I have made this recipe, or variations of it for over 30 years, usually using a 'Jiffy' cake mix and baking it in a loaf pan like a pound cake. It tastes best paired with a Jell-O and ice cream pudding using the same flavor of Jell-O. It tastes great & is sooooo easy. (momg) momg

Used a tub of vanilla frosting, adding a teaspoon of coconut extract and heated it in the microwave to make it a "glaze" and sprinkled coconut on top. Really good! My family loved it.
