My kids are not fans of zucchini, so I used cucumber instead. Turned out very well, quite tasty.
WOW!! That is GOOD!! I added yellow pepper,zucchini,mushrooms and doubled the noodles and pesto sauce.(I had a big group to feed) Just before serving I added chopped tomatoes, olives, red onion and sliced avovado. It was sooo good and easy. I made it the night before and let the flavors blend. Will defenitly make again!!
