Used as a marinade for the grilled chicken in this easy-to-make recipe, this flavorful sauce, or salsa verde, can also be served drizzled over gilled salmon or vegetables.
For year-round grilling, prepare this tasty recipe using a grill pan. Heat pan on medium-high heat. Add chicken; cook 5 to 6 min. on each side or until chicken is done (165ºF).
For added flavor, double all ingredients except chicken. Marinate chicken in half the parsley mixture, then grill as directed. Serve remaining parsley mixture spooned over the grilled chicken.
In addition to adding color to the delicious marinade, the parsley is also rich in vitamin A and provides vitamin C.
