  • Beat olive oil, lemon juice, salt, black pepper and garlic in large bowl with wire whisk until well blended.
  • Add remaining ingredients just before serving; toss lightly.

Note

You will need to cut up about 3 whole pita breads in order to get the 4 cups pita bread pieces.

Make-Ahead

Prepare dressing as directed; cover and refrigerate until ready to use. Toss with remaining ingredients just before serving.

It takes me longer than 15 minutes to chop everything up, but it is worth it. I made it originally to take to a gathering; then came home and made it again because there wasn't enough leftover!

I did add Romaine Hearts, it seemed like it would be better with some greens. I also used Greek salad dressing from a bottle. I toasted the pita bread a little before cutting it up and it was warm, soft and yummy!
