  • Mix yuca and half of the garlic in large saucepan. Add enough cold water to completely cover the yuca. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 min. or until yuca is tender.
  • Meanwhile, combine remaining garlic, the dressing, black pepper and cumin in small saucepan; cook on medium heat 4 min. or until heated through, stirring occasionally. Add chicken stock and lime juice; mix well. Bring to boil. Remove from heat.
  • Drain yuca; place in serving bowl. Add dressing mixture; mix lightly. Sprinkle with cheese and parsley.

Creative Leftovers

Yuca is available year round. Look for firm, well-formed tubers, free of blemishes, with a clean fresh scent. Store whole yuca in a cool, dark dry place for up to 1 week. Store peeled yuca in the refrigerator covered with water. Or, wrap whole yuca and freeze for several months.

Substitute

For a sweeter flavor, substitute orange juice for the lime juice.
