Rated 5 out of 5 by from I thought this recipe was for a potato salad! I thought this recipe was for a potato salad! I ended up making it thinking you added mayo and all of that stuff. But i realized this was just a mashed potatoe recipe after i made it. I did not add the dijon mustard to the recipe because it was awesome without it.! I will try to add the mustard and let you know how it goes. But i used a small food chopper and finely cut the onion and the garlic in my chopper. I was thinking mostly all of the onion floated out when idrained it, maybe it was minced a little too small. But it still had an excellent flavor. Definetly a keeper and easy..i will keep you posted on the dijon mustard addition.

Rated 4 out of 5 by from Made these on Thanksgiving and to rave reviews. Made these on Thanksgiving and to rave reviews. I would however recommend using less onion...and be sure to finely mince the onion. I sliced mine as I thought that boiling them would cause them to disintegrate once I mashed them...but this was not the case. I ended up picking mine out by hand as they came didn't look right and made the texture strange.

Rated 5 out of 5 by from This was SO good. This was SO good. Only I would have mashed the potatoes a little less because I like a few chunks. And I put in too much milk (I couldn't find the tablespoon so I just guessed [wrong]) so they were a little bit too liquidy. But other than that they were amazing.

Rated 5 out of 5 by from Delicious! Delicious! I used green onions instead of parsley(didn't have any on hand), and that was the only change. Served it with fish and balsamic brussel sprouts. Definitely a keeper! Thanks!

Rated 4 out of 5 by from This went over well with the fiance'. This went over well with the fiance'. It was easy to make too. I took candicetg2 advice about addng less onion. The only difference I would make next time is adding a little less mustard.

Rated 4 out of 5 by from I liked these mashed potatoes. I liked these mashed potatoes. They go well with pork. The dijon flavor is a bit strong so next time I might reduce the amount of mustard I use. Otherwise, these are perfect.
