Italian bread slices are topped with Parmesan and cheddar cheeses, broiled until toasty and served alongside cool bowls of delicious gazpacho soup.

what you need

cups  low-sodium vegetable juice cocktail

 tomato, chopped

Tbsp.  lime juice
1/2
cup  finely chopped cucumber
1/4
cup  chopped onion
5
 fresh basil leaves, chopped
1/4
tsp.  garlic powder
4
slices  Italian bread
4
tsp.  soft reduced fat margarine
2
Tbsp.  KRAFT Grated Parmesan Cheese
1/4
cup  KRAFT 2% Milk Shredded Cheddar Cheese

Make It

STIR vegetable juice, tomato, lime juice, cucumber, onion, basil and garlic powder until well blended.

SPREAD bread slices with margarine; sprinkle with cheeses. Place on cookie sheet.

BROIL bread 4 to 5 inches from heat for 2 to 3 minutes or until golden brown. Serve with gazpacho.
