  • Stir vegetable juice, tomato, lime juice, cucumber, onion, basil and garlic powder until well blended.
  • Spread bread slices with margarine; sprinkle with cheeses. Place on cookie sheet.
  • Broil bread 4 to 5 inches from heat for 2 to 3 minutes or until golden brown. Serve with gazpacho.

    The cucumbers give it a fresh flavor. I also added a very finely chopped carrot. It's delicious. Even those that don't like tomatoes might enjoy this refreshing soup. And SO easy to make! Thanks for the recipe, Kraft!

    Great for lunch. My children didn't care for the onions, so next time I'll just add two whole cucumbers. The cheese bread is a great anytime snack.
