Prepare using halved baby red potatoes.
The potatoes will firm up once they cool. For this reason, the dressing is added to the potatoes while they are still warm, allowing it to seep into the potatoes.
Though commonly served warm, this potato salad is also delicious served chilled.

I didn't really care for the green beans in the recipe. As a side dish, the green beans would be ok. German potato salad is better I think without green beans!
For years I've always made traditional southern potato salad as my father taught me. My son, however just can't stand it. He doesn't care much for mayo nor a mustard based potato salad. So for Memorial Day I made this. My son (and the rest of the family) LOVED it. It was the first time EVER that he truly enjoyed a "potato salad". It was so fresh and light tasting too. I served it with grilled chicken and homemade spicy cream corn and balsamic marinated mushrooms. It was incredible. Definitely making this again!
