  • Prepare cake batter and bake in greased foil-lined 13x9-inch baking pan as directed on package. Cool completely. Cut cake into pieces as shown in diagram. Arrange on serving platter as shown in photo ; set aside.
  • Place chocolate and cream in medium microwaveable bowl. Microwave on MEDIUM (50%) 2 to 3 min. or until chocolate is completely melted and mixture is well blended, stirring after each min. Remove 1/4 cup of the chocolate mixture; place in small resealable plastic bag. Set aside. Add powdered sugar to remaining chocolate mixture in bowl; beat with wire whisk until smooth and of spreading consistency. Spread onto cake.
  • Decorate with candies as shown in photo. Cut 1/8-inch piece from one of the bottom corners of bag of melted chocolate. Use to pipe chocolate onto the cake for the "horse's mane."

Size Wise

At 20 servings, this cake is perfect for a child's birthday party or another special occasion.

How to Frost a Cake

If the cake is very soft and crumbly, apply a “crumb coating” to prevent cake crumbs from mixing with the frosting. Spread a thin layer of frosting over the entire cake, then let stand 5 to 10 min. or until frosting is set. Spread remaining frosting over cake.

Easy Cleanup

Lining the baking pan with foil makes for easy cleanup and easy removal of the cake from the baking pan. When lining the pan, allow 3 inches of the foil to extend over each side of pan to use as handles when removing the cake from the pan.

I made this cake for my 10 year old grand-daughters birthday held out at the horse barn, with all of her fellow girl riders. The only problem I had with the recipe, was the icing. I couldn't get it to set up. I finally put the icing in the refrigerator for over an hour to get it thick enough to spread onto the cake. The pattern was excellent for cutting out the cake and overall the cake was delicious. I would just not use the same recipe for the icing. I think cool whip and the chocolate work better. The girls devoured the cake! There wasn't a crumb left! Now all her friends want me to make their next birthday cake too!

Rated 3 out of 5 by from I also had a problem with the icing. I also had a problem with the icing. But it worked out quite delicious. I spread a few coats of the runny icing on the cake and it soaked in and make the cake a gooey fudgy yummy, and then I put additional 10X sugar in the icing and refirgerated it until firm enough to ice the cake. I made a similar cake a few weeks earlier and the recipe for the icing called for WHIPPED CREAM instead of whipping cream. I used coolwhip and it thickened in about 5 minutes with no refridgeration. Maybe the recipe is a mis-print.

I did not make the frosting as others had issues with it and I didn't want to chance it. If given the opportunity I would make it again! Perfect cake for a Cowboy party!

I used regular canned chocolate icing but it didn't turn out as smooth as the picture so next time I will try the icing recipe. It was still adorable though! Great recipe!

After so many reviewers have written about this icing being so thin and runny, which makes it impossible to pipe the horse's mane, why, oh, why, wouldn't you review this recipe and make it so that it works?? That's what I'd love to know!
