  • Heat oven to 350°F.
  • Combine flour, baking powder, salt, baking soda and spices. Mix molasses and water until blended.
  • Beat shortening in large bowl with mixer until creamy. Gradually add sugar, beating until light and fluffy. Blend in egg. Add flour mixture alternately with molasses mixture, beating well after each addition.
  • Pour into 8-inch square pan sprayed with cooking spray.
  • Bake 35 min. or until toothpick inserted in center comes out clean. Cool slightly. Serve topped with the Lemon Sauce.

How to Easily Measure the Molasses

Lightly coat measuring cup with cooking spray before adding the molasses. The molasses will slide right out instead of clinging to the cup.

I made this gingerbread with the lemon sauce for a group of 12 women and they all were very complimentary. The lemon sauce tends to gel if made the night before, but is still good. Also, I had no cloves and left it out with no noticeable results.

Rated 5 out of 5 by from Very tasty! Very tasty! Made it for guests and it was a great hit along with brandied ice cream. For a nicer presentation I baked it in a bundt pan and, although small, it turned out very well. The lemon sauce is great with this.
