  • Preheat oven to 350°F. Sift flour with baking powder, salt, baking soda and spices; set aside. Mix molasses and water until well blended; set aside.
  • Beat shortening in large bowl with electric mixer on medium speed until creamy. Gradually add sugar, beating until light and fluffy. Blend in egg. Add flour mixture alternately with the molasses mixture, beating well after each addition. Pour into greased 8-inch square baking pan.
  • Bake 35 min. or until toothpick inserted in center comes out clean. Cut into 9 squares. Serve warm or at room temperature topped with the Lemon Sauce.

How to Easily Measure Molasses

Lightly coat measuring cup with cooking spray before adding molasses. The molasses will slide right out instead of clinging to cup.

    Use butter instead of shortening, and fresh ginger in place of dried.

    This receipe was great. Was nice and moist. Better the next day.I make some homemade applesauce to serve with it and was perfect.

    I made this gingerbread with the lemon sauce for a group of 12 women and they all were very complimentary. The lemon sauce tends to gel if made the night before, but is still good. Also, I had no cloves and left it out with no noticeable results.
