  • Combine sugar and cornstarch in medium saucepan. Gradually stir in water until blended. Bring to boil on medium heat, stirring constantly; cook and stir 1 min. Remove from heat. Add dry gelatin mix; stir 2 min. until completely dissolved. Stir in fruit.
  • Fill crust with fruit mixture. Refrigerate 3 hours or until filling is firm.
  • Top with COOL WHIP just before serving.

Variation

Prepare using JELL-O Strawberry Flavor Gelatin, and substituting fresh blueberries for the raspberries.

Rated 5 out of 5 by from Delicious and Easy! Delicious and Easy! I made this for my family - husband, son, daughter in law and 2 grand kids ages 3 and 5. Everyone loved it and I am making it at their request for Memorial Day. I used a deep dish pie plate so next time I will increase the amount of berries to fill it more. I won't need to increase the gelatin as there was plenty. It was a little on the sweet side so I will decrease the added sugar by 1/4 cup and see how that is. I also plan to add blueberries and blackberries as well.

I did not use anything related to raspberry as I don't care for it. So strawberry all the way...fruit & jello. Went out to my garden and picked more strawberries to make another pie after company left so hubby and I had more to enjoy. Easy, quick and Yummy. My berries were a little more juicy than store bought so added a little more corn starch. Perfection! Makes a inviting presentation and oh so yummy!

The variation listed uses strawberry jello and blueberries but I used strawberry jello and blackberries and it was wonderful! I'm always looking for blackberry recipes.
