  • Cook and stir green pepper and onion in nonstick skillet for 5 minutes or until crisp-tender. Place in medium bowl. Add cooked grits, 3/4 cup of the cheese and salt; stir until well blended. Add eggs; mix well.
  • Pour into greased 8-inch square baking dish; sprinkle with remaining 1/2 cup cheese.
  • Bake at 350°F for 30 minutes or until center is set. Let stand 10 minutes before serving.


Serve for a satisfying breakfast or as a flavorful entree for your next brunch buffet.

    Delicious! My family ate this up at brunch and I will be making this one again and again! I did not use the onion or pepper and it was still great!

    Loved it! I also do not like bell peppers but just added green onions and bits of bacon...oh yummy!

    I really like this recipe and so did my husband. It made breakfast more interesting than the same old boring thing. I also added some green onions to it and next time I will leave out the green peppers because we aren't big fans but wanted to taste it the way it was written first. I would also add some precooked bacon next time. Thanks for the recipe!
