Gorgonzola and cooked mushrooms, garlic and green onions fill a hollowed out Italian loaf.

what you need

loaf  (1 lb.) Italian or French bread, split lengthwise
6
cups mixed sliced assorted mushrooms, such as portobello, crimini and button
1
cup sliced green onions
2
cloves garlic, minced
1
Tbsp. olive oil
1
cup ATHENOS Crumbled Gorgonzola Cheese

Make It

PREHEAT oven to 400°F. Scoop out center of each bread half, leaving 1-inch-thick shells.

COOK and stir mushrooms, onions and garlic in hot oil in skillet until tender. Spoon into bottom of bread loaf. Sprinkle with cheese; cover with top of bread. Wrap in foil.

BAKE 15 to 20 min. or until cheese is melted. Cut crosswise into 12 slices to serve.

Make-Ahead
Prepare as directed except do not bake. Wrap in foil as directed. Refrigerate several hours or overnight. When ready to serve, bake, wrapped, at 400°F for 25 to 30 min. or until cheese is melted.
