Gorgonzola-Stuffed Bread

Gorgonzola and cooked mushrooms, garlic and green onions fill a hollowed out Italian loaf.

loaf (1 lb.) Italian or French bread, split lengthwise

cups mixed sliced assorted mushrooms, such as portobello, crimini and button

cup sliced green onions

cloves garlic, minced

Tbsp. olive oil

cup ATHENOS Crumbled Gorgonzola Cheese

Make It

PREHEAT oven to 400°F. Scoop out center of each bread half, leaving 1-inch-thick shells.

COOK and stir mushrooms, onions and garlic in hot oil in skillet until tender. Spoon into bottom of bread loaf. Sprinkle with cheese; cover with top of bread. Wrap in foil.

BAKE 15 to 20 min. or until cheese is melted. Cut crosswise into 12 slices to serve.

Make-Ahead

Prepare as directed except do not bake. Wrap in foil as directed. Refrigerate several hours or overnight. When ready to serve, bake, wrapped, at 400°F for 25 to 30 min. or until cheese is melted.

I made this bread for an office luncheon and it was a big hit. The only problem was that when I cut it up, much of the stuffing fell out. I will make this again but I may just slice the bread, sprinkle the slices with the cheese, top with the mushrooms, and bake until crispy and warm. In all, it was very good and very flavorful, just messy.

Can be pretty expensive to make, depending upon what types of mushrooms you use. I had about $16 into this recipe, but it was worth it! All my friends LOVE mushrooms - what a great recipe.

Totally awesome! Had never used gorgonzola cheese before, but omg, this flavor combination was so wonderful. It's been awhile since I made it, everyone keeps asking me for the recipe or to make it again! :) Thanks, Kraft!

I made this for a New Year's Eve party and everyone loved it. It is great with imitation crab meat and artichoke hearts added as well.

also works well with goat cheese as it brings out the flavor of the mushrooms.
