  • Heat oven to 425ºF.
  • Brown meat in large skillet; drain. Return meat to skillet; stir in salsa.
  • Place 1 pie crust on baking sheet; top with meat mixture, spreading to within 1 inch of edge. Cover with cheese and remaining crust; seal edge with fork.
  • Bake 25 min. or until golden brown. Cool 5 min. before cutting into wedges to serve.

Added a ¼ cup taco seasoning to the ground beef. After I drained the beef, I added about 1 cup of chopped onions along with the salsa cooked it another 5 minutes on low heat. Coated the bottom of the pie crust with refried beans with mild green chilies. Cooked it on a pizza stone , didn’t have to cook it 25 minutes or the crust would have burned, only had to cook it 20 minutes. The last 5 minutes, I covered the top of the empanada with more cheese and let it melt. Served it with sour cream and jalapenos. My husband’s comment was, “that was good, make it again”, high praise!!

I've used ground turkey meat to make it leaner and season the meat with a taco seasoning packet.. I like it when I add refried beans inside, and I've also used black beans. Top it with sour cream or whatever you want! My husband asks for this quite often!

Rated 5 out of 5 by from Did it twice. Did it twice. First time exactly according to recipe. was good,bottom crust a little soggy in the middle part. Second time I added choppedonions,chopped green pepper,garlic powder,ground red pepper,dried cilantro to hamburger as it was cooking. Instead of salsa used a can of diced fire roasted tomatoes(undrained)and a little extra cheese. Used parchment paperto keep the bottom crust from being soggy. I will make my own version (the second) very often! Yummm!

I made this for dinner tonight and was wowed by a couple things. 1st- how fast it was to make, 2-how you can make this several ways and make it your own. 3rd- How darn good it was!! My kids loved it!! We topped it with sour cream and cilantro. I put the meat mixture down first, spread with cheese and on other pie crust, I topped it with a thin layer of refried beans and it was delish!!!! Will be making this quit often!!!

Rated 5 out of 5 by from I made this for my family last night and it was a HUGE hit! I made this for my family last night and it was a HUGE hit! Even my picky 5 year old ate it! I agree with the other post, I did add a good lump of refried beans to the meat mixture to hold it together. Tasted great!! I also added cilantro, tomatoes and onion to the top. Finished it off with Lite Sour Cream. Special Note: It tasted even better today for lunch leftovers!! :)

I browned the bottom crust a little first and I spread refried beans on the bottom and then put taco meat (used taco seasoning) on top along with the cheese and my home-made salsa and then after it was done, I topped it off with some more cheese, homemade salsa, fresh garden tomatoes and chives. My family went nuts for it.

I added a few sauteed onions but otherwise followed it to the letter and it was great. As a young child I lived in Bogata, Colombia and recall eating empanadas. This made me remember why I begged my Mom to make them often! It's so easy, quick, and there are so many possibilities with the recipe.

My kids wanted to try it again but instead make it like a bacon cheeseburger so we browned some onions with the hamburger, stirred in a little ketchup with a dab of mustard and added cooked & crumbled bacon. We used slices of Kraft American cheese and the kids loved this as well. Keep up the good work!
