HEAT oven to 400°F.
PIERCE each potato in several places with fork or sharp knife. Bake 50 min. to 1 hour or until tender. Cool slightly.
MIX all remaining ingredients except pepper until blended. Cut each potato crosswise into 3 slices. Use melon baller or small spoon to scoop small amount of potato from center of each slice; discard removed centers.
PLACE potato slices on baking sheet; sprinkle evenly with pepper. Fill centers with cream cheese mixture.
BAKE 15 to 18 min. or until heated through.
