Gouda-Filled Potatoes Dijon

This awesome side dish truly elevates the cheesy potato game. It's made with smoked Gouda, cream cheese, Dijon mustard and freshly chopped chives.

What You Need

large   baking potatoes (2 lb.)
oz.  (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
cup  shredded MAYBUD Smoked Gouda Cheese
Tbsp.  GREY POUPON Dijon Mustard
Tbsp.  chopped fresh chives
tsp.  ground red pepper (cayenne)

Make It

HEAT oven to 400°F.

PIERCE each potato in several places with fork or sharp knife. Bake 50 min. to 1 hour or until tender. Cool slightly.

MIX all remaining ingredients except pepper until blended. Cut each potato crosswise into 3 slices. Use melon baller or small spoon to scoop small amount of potato from center of each slice; discard removed centers.

PLACE potato slices on baking sheet; sprinkle evenly with pepper. Fill centers with cream cheese mixture.

BAKE 15 to 18 min. or until heated through.
