WI often prepare with a bit of minced mushrooms, onions and green peppers. One note, don't put the cheese on the eggs in the skillet because it will run out of the sandwich.

I made this recipe for my wife on Mother's Day...(we celebrated it late because of the New England floods). It was great! Instead of a muffin, I used a raisin cinnamon bagel. My 2 year old son wrapped it up in paper from my wife's favorite through drive through and then we all had one of these at the table. (He also liked putting the "made fresh today" sticker that they gave him on the paper). I served this with a favorite coffee from a local store and she loved it!

Rated 5 out of 5 by from I have been making this recipe for over 25 years! I have been making this recipe for over 25 years! Started when my kids were preschoolers and they are now in their 30's! Have used bagels, rolls, croissant, real and "sub" eggs, bacon, turkey bacon, sausage, canadian bacon and all kinds of cheese. Our favorite way of cooking the eggs is in a small dish that perfectly fits the muffin and goes into the microwave. We have put salsa on them for a new twist on taste.

Microwave 1 1/2 minutes then place 2 slices (round)candian bacon microwave another minute. Dumps out on the muffin & enjoy!

Wrap sandwich in waxed paper, less drippy mess, and go. I make this at least 2x a week.

Rated 5 out of 5 by from Very, very good. Very, very good. I modified it a little bit, I substituted the bacon for apple slices, and it was great!!! I also used a whole wheat muffin to up the fiber. Very good for a quick meal any time of the day.

Makes it easy to get him fed and not worry that he's getting to many carbs or sugar. I've substituted the english muffin with bagels a time or two. I use the 100 calorie english muffins to cut the calorie count down. Great both ways.

I use a whole wheat lite muffin, the southwestern egg product, a fat free slice of kraft singles and a microwaved veggie burger patty - since I am a WW member. It is just as delicious, high in fiber but super low on fat and calories.
