  • Heat oven to 400ºF. Mix crumbs, sugar and baking powder in medium bowl.
  • Add milk, egg and honey; stir just until moistened. Spoon into 9 greased muffin cups, filling each 2/3 full.
  • Bake 15 to 18 min. or until lightly browned. Let stand 5 min.; remove from pan. Serve warm.

To quickly crush graham crackers into crumbs, process in blender or food processor.

Drizzle muffins with a powdered sugar glaze made by mixing 2 Tbsp. milk or water into 1-1/2 cups powdered sugar until smooth.

I used 2 cups of crushed Ginger snaps in place of 2 cups of Grahams, and substituted 2 tablespoons of molasses for two tblspns of the sugar. They tasted really good. (If you like Gingersnaps that is. - I love them.) Nice and gingery. I suppose you could use any kind of crushed cookie in place of the Grahams if you wish. (Although you might have to adjust the sweetener a bit, as most cookies are much sweeter than Graham crackers.)

We had some left over broken up graham crackers that we had from smores and so we took them and made the muffins. We didnt make the large muffins we made mini ones and put the glaze on them. Very good. Kids will love them as well. Great for afterschool snacks if you make them mini.
