Grasshopper Parfaits Recipe

What You Need

15

OREO Cookies, finely chopped (about 1-1/2 cups)

10

chocolate-covered mint patties, finely chopped (about 1/2 cup)

2

pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding

1

qt. (4 cups) cold milk

2 to 4

drops green food coloring

2

cups thawed COOL WHIP Whipped Topping

Make It

COMBINE chopped cookies and mint patties.

BEAT pudding mixes and milk with whisk 2 min. Let stand 5 min. Meanwhile, stir food coloring into COOL WHIP until blended.

LAYER half each of the pudding, COOL WHIP and cookie mixture evenly in 12 parfait glasses. Repeat layers. Refrigerate 30 min.

I made this recipe for a party and it was definitely a hit! The only things that made it not 5 stars was the time it took (I made the full 12 and doing all 3 parts and assembly took me way longer than 25 minutes) and the difficulty of using the mint patties-so hard to cut/sprinkle, etc. I used mint oreos and next time I will probably just use the oreos and garnish with a mint patty. But otherwise great!

Pretty good, but the cookies kinds got soggy while the pudding set.

I added a tsp of peppermint extract to the pudding for a little more flavor - delicious! Was great for St. Patrick's Day!

This was easy, and very delicious! I made two of them for two seperate occasions, and got wonderful reviews on them! Very yummy!

I made this for dessert on St Pat's Day. I used Girl Scout Thin Mint cookies. My kids loved it!

I would give this recipe 4 stars however with some minor modifications it went up to a 5 star hit...everyone devoured them, including my one year old!!! First I used mint oreos and andes. Second I used a little creme de menthe with half of the pudding mix (for the adults). Would definately make again as it took about 30 minutes...quick easy and delicious...
