  • Crush 2 wafers; sprinkle onto bottom of 9-inch pie plate sprayed with cooking spray.
  • Beat pudding mix, milk and extract in large bowl with whisk 2 min. Stir in COOL WHIP and chopped chocolate; spoon over wafer crumbs in pie plate. Top with remaining wafers, cut into quarters.
  • Freeze 6 hours or until firm. Remove pie from freezer 10 min. before serving; let stand at room temperature to soften slightly before cutting to serve.

Substitute

Prepare COOL WHIP Sugar Free Whipped Topping.

Variation

Prepare as directed, using JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding and stirring a few drops green food coloring into the pudding mixture before spooning into prepared pie plate.

I substituted 2 whole chocolate graham crackers for the wafers. Instead of the Baker's chocolate I used mini semi-sweet chocolate chips. This is a recipe I will make time and time again. I know my married children will enjoy it. Thank you for all the wonderful recipes.

My mother-in-law said that this tasted like Andes candy to her.I will probably make this again for St. Patrick's Day. It was so nice to find a delicious dessert recipe with so few calories. I made this for a St. Patrick's Day party I hosted last night & it was a big hit. Very festive! For time's sake, instead of crushing chocolate wafers, I put the filling in a prepared chocolate pie crust. It turned out great! I will definitely make this pie again!

My only comment would be next time I would try to remove the nuts from the pudding beforehand as we are not fans of nuts but otherwise T-riffic! Hard to believe its non-toxic to diets. Was wondering if the leftovers should be re-frozen?

Makes a VERY welcome change from angel food cake and fresh fruit at EVERY get together. I have substituted No Fat ice cream for the Cool Whip Lite and served it frozen. Still awesome.

Instead of the traditional tie gift for Father's Day I made this for my father-in-law who is diabetic. It was quite simple, flavorful and my mother-in-law said it was fabulous. He dearly loves to eat and this was a healthful tasty surprise for him. Will definitely make again.

If I were to do it again, I would put it in a pre-made chocolate pie crust. I didn't like the pistacio-mint combo, so I would use white chocolate pudding and color it green. Overall, it was an average desert.
