  • Crush 2 wafers; sprinkle onto bottom of 9-inch pie plate sprayed with cooking spray.
  • Beat pudding mix, milk and extract in large bowl with whisk 2 min. Stir in COOL WHIP and chopped chocolate; spoon over wafer crumbs in pie plate. Top with remaining wafers, cut into quarters.
  • Freeze 6 hours or until firm. Remove pie from freezer 10 min. before serving; let stand at room temperature to soften slightly before cutting to serve.

Substitute

Prepare COOL WHIP Sugar Free Whipped Topping.

Variation

Prepare as directed, using JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding and stirring a few drops green food coloring into the pudding mixture before spooning into prepared pie plate.

Rated 5 out of 5 by from Amazing! Amazing! I would add just a touch more peppermint extract. I used a regular chocolate pie crust (and baked it with a beaten egg swiped over it) and it was perfect! I cut up a York Peppermint Patty for the topping--looked nice and gave it an extra KICK!

The wafer crust is a little strange, but tastes wonderful. If you enjoy chocolate chip mint ice cream (like I do) then you will love this!
