  • Heat grill to medium heat.
  • Sprinkle 2 Tbsp. cheese onto half of each tortilla. Top with salsa and cilantro. Fold in half to enclose filling; press lightly to secure.
  • Grill 1 to 2 min. on each side or until cheese is melted and quesadillas are lightly browned on both sides.
  • Cut in half to serve.

Substitute

Substitute sliced green onions for the cilantro.

(He wanted them for breakfast today) I added sliced cherry tomatoes, a little crumbled bacon and used chives instead of cilantro. Yum

Rated 4 out of 5 by from 1 tablespoon of cilantro was a little too much here (for half a tortilla! 1 tablespoon of cilantro was a little too much here (for half a tortilla!), try 1/2 or 3/4 tbsp. With that much cilantro you can't taste the cheese. Otherwise these were very good and I'll definitely make them again.

I have prepared these many times now and my youngest is now following the recipe herself. We love the zap, and sometimes I add a little mushrooms and pepper jack cheese. Its a favorite in this home!
