  • Heat oven to 350ºF.
  • Heat dressing in large nonstick skillet on medium-high heat. Add chicken; cook 6 min. or until done, stirring occasionally. Remove from heat. Add rice and zest; mix lightly.
  • Spread tortillas with hummus; top with chicken mixture, cheese and spinach. Fold in opposite sides of each tortilla, then roll up burrito-style. Place, seam-sides down, in single layer in casserole.
  • Bake 20 min. or until heated through; top with yogurt and tomatoes.

These burritos are a welcome change. We originally thought they might be too bland, but the lemon gives a nice flavor. We add cucumber and avocado to the tomatoes on top, but otherwise make them according to the recipe. The best part is that our 3 boys love them too.

Rated 5 out of 5 by from I made these last night. I made these last night. The feta cheese and the vinaigrette give this a nice zing and it's a welcome change to the average burrito. I added a bunch more spinach (personal preference) but other then that I made the recipe as listed. This recipe was a keeper for me!
