I was not able to find the wheat coucous so I used the white. Make sure you let it sit several hours or over night so the flavors gets through everything. You may want to add a little more dressing after it has sat for a while.

He liked the flavor and texture combinations --and with the garden bringing in lots of cucumbers and tomatoes, this is great. The only change I made was to use Kraft Greek Vinagrette instead of Italian dressing.

This dish does'nt have a ton of real powerful flavor, but its a perfect side dish for a summertime meal. I will definitely make this recipe again. I already have a box of couscous in my pantry.

Of course, I had to explain to them what couscous was, but they all tried it and loved it. I used a flavored (tomato & basil) feta cheese, rather than the plain.

I think it may be a feature at our next family gathering. I have added the red bell peppers as well, and it was just as good.

I thought shredded carrots or (drained) shredded zucchini or yellow squash would add more vegetables. My family doesn't prefer a lot of cucumber. They like chickpeas, too, which would be an appropriate addition.

Rated 4 out of 5 by from very good! very good! I made this as a side dish with BBQ steak, everyone loved it. I made it again the next day except I stuffed pita bread with it and it made a great lite lunch! I plan on making this again!
