what you need

Tbsp. oil
1
lb. boneless skinless chicken breasts, cut into strips

cloves garlic, minced

cups MINUTE White Rice, uncooked
1
can (14-1/2 oz.) chicken broth
1/2
cup grated carrots
1/4
cup sliced pitted ripe olives
1
Tbsp. grated lemon zest
1
Tbsp. parsley flakes

Make It

HEAT oil in large nonstick skillet on medium-high heat. Add chicken; cook and stir 6 to 8 minutes or until chicken is cooked through, adding garlic for the last 3 minutes of the cooking time.

ADD remaining ingredients; stir until well blended. Bring to boil; cover.

REMOVE from heat. Let stand 5 minutes.

Jazz It Up
Sprinkle with ATHENOS Traditional Crumbled Feta Cheese after removing from heat. Let stand 5 minutes before serving.
Substitute
Prepare as directed, using MINUTE Brown Rice.
