I read the other reviews before making this, so I took some of their suggestions. I marinated in Italian dressing for a couple of hours and set the grill to a medium setting so as not to burn the bacon. Added some seasoning to the chicken after rolling it up (black pepper, garlic powder, cajun seasoning). Also used cheddar cheese. I find American cheese to be a little boring. One of the other reviewers recommended possibly pepper jack cheese. That sounds like it could be very good. May try that next time.

I made this recipe last summer when it was in the magazine (that I sadly no longer get...boo that it's only online now). My family loves it! My husband will not eat chicken breast, so I use thighs (boneless and skinless). It's easy, and he especially loves it and asks for it and he's not a chicken lover. I even make it during the winter months inside on my george forman grill. The outside grill is hands down the best, but the forman is a good substitute when it's cold. I sometime don't even put the dressing on it and it's still great!!

Overall, this was really good and I like the fact that it only requires minimal ingerdients. However, I also struggled with the cheese slices crumbling when I rolled them up w/ the chicken. The last time I made them, I used string cheese instead. It was much easier.

Rated 5 out of 5 by from This was definately an interesting twist to grilled chicken. This was definately an interesting twist to grilled chicken. I have a feeling I'll have to make it a few times before I perfect it though. The bacon fat caught on fire, so most of the bacon was crucnh black nubs if it didn't fall off the chicken completely... But everyone seemed to like it, so, we'll try it again. :)

I think the key to this recipe is to be sure the chicken is wrapped tight and secured with toothpicks. I also recommend to only turn your grill to medium, I had it a little high and torched the bacon. Otherwise easy and delicious, I will prob try to marinate the chicken in advance next time for additional flavor

I took the advice of adding flavor - I marinated the chicken breasts in a tequila chile lime marinade for about 3 hrs. I used a mexican blend of cheddar cheese instead of the american cheese and I used a course ground pepper, garlic & salt seasoning on the outside of the rollers before grilling. DELISH!!

I used thick slices of sharp Cheddar, and marinated the chicken rolls in Kraft Italian Vinaigrette Dressing made with Extra Virgin Olive Oil for about 5 hours. Baked the chicken at 350 for 25 min., then broiled (to crisp bacon) for 5 min. Very good, even though some of the cheese melted out.
