I'm guessing it's the bacon that helps keep the chicken breast nice and moist. Very good.
I read the other reviews before making this, so I took some of their suggestions. I marinated in Italian dressing for a couple of hours and set the grill to a medium setting so as not to burn the bacon. Added some seasoning to the chicken after rolling it up (black pepper, garlic powder, cajun seasoning). Also used cheddar cheese. I find American cheese to be a little boring. One of the other reviewers recommended possibly pepper jack cheese. That sounds like it could be very good. May try that next time.
