I can't rate this recipe cause I haven't made it yet, it sounds awesome but when I think of summer veggies I think more than just peppers. Do you guys think this would be good with diced zucchini and yellow squash too?? I think it would, just looking for other opinions...got a TON of squash growing and looking for different recipes to use it in.....Thanks
