  • Heat grill to medium heat.
  • Blend dressing, chipotle pepper and lime zest in blender until smooth. Reserve 1/3 cup for later use.
  • Grill chicken, chayotes and onions 20 min. or until chayotes are tender and chicken is done (165ºF), turning occasionally and brushing with remaining dressing mixture for the last 5 min.
  • Cut each onion wedge crosswise in half; toss with salad greens, tomatoes and chayotes in large bowl. Add reserved dressing mixture; mix lightly. Spoon onto platter.
  • Cut chicken thighs in half; place over salad. Top with cheese, bacon and cilantro.
