  • Heat grill to medium heat.
  • Arrange 3 lemon slices, slightly overlapping, on half of each of 4 large sheets heavy-duty foil sprayed with cooking spray. Place fish, skinned-sides up, on work surface. Spread each with 1 Tbsp. cream cheese spread; top each with 2 tsp. onions. Roll up, starting at thin end of each fillet.
  • Place 2 roll-ups, seam-sides down, on lemon slices on each foil sheet; top with asparagus and peppers. Fold each foil sheet to make packet.
  • Grill 6 to 8 min. or until fish flakes easily with fork. Carefully open foil packets; top fish with remaining onions and lemon slices.

Special Equipment Needed


Substitute 1 cup sugar snap peas or halved grape tomatoes for the asparagus.


Depending on the type of sole you buy, the fillets can vary in size; use either 8 small or 4 large fillets. For larger fillets, increase cooking time slightly if needed.

Serving Suggestion

Serve with hot cooked brown rice or couscous.

I have a creamed spinach-stuffed fish recipe that I really didn't think I could make using foil packets (didn't think it would cook through, being rolled up). This recipe have me the idea to try, and it turned out even better than if I'd cooked it in the oven! I topped it with a mix of thinly sliced squash, carrots, and onion, and the meal was a total success! Thanks for giving me the confidence to try it out!

Rated 5 out of 5 by from YUMMY! YUMMY! I did make a few changes based on what I had on hand. I used white ruffy instead of sole and also Philly Italian cheese and herb cream spread. My pieces of fish were pretty big so I had to double the cooking time. Served with wild rice. Very simple and tasty. I ate the cooked lemon rinds and they really added a lot to the flavor.
