  • Mix dressing and crushed red pepper. Pour over fish and peppers in shallow glass dish; turn fish and peppers over to coat both sides of each with dressing mixture. Refrigerate 15 min. to marinate.
  • Heat grill to medium-high heat. Remove fish and peppers from marinade; discard marinade.
  • Grill fish and peppers on covered grill 4 min.; turn fish over. Grill, covered, 2 min. or until fish flakes easily with fork. Place fish and peppers on serving plate. Sprinkle with cheese and cilantro; let stand 3 min.

Cooking Know-How

Fish is done when it looks opaque and just begins to flake easily with a fork. Undercooked fish looks translucent and overcooked fish looks dry and falls apart.

Keeping it Safe

Never refreeze fish or seafood, whether fresh or frozen, once it's been thawed. Store in the refrigerator, tightly wrapped or in an airtight container, for no more than 2 days.

Substitute

Prepare using other firm white fish fillets, such as halibut or tilapia.

I also baked it instead...b/c it's too cold out to grill :( It was amazing. My husband commented several times on how good this meal was. He admitted that when he saw the dish he was a little iffy about it. After he tasted it he loved it. We bothed loved the bite that the crushed red pepper gave to it. It's such a different flavor for fish. Exceillent! I cooked the peppers right along with the fish and I actuallly thought I would need to saüte the peppers after being baked, but I didn't. They were exactly how they should be. Tender enough to eat, but still have that pepper crunch! I will definitely be making this again.

I tried to make this recipe on the grill, alas, as soon as I had it all prepared, we realized the grill was out of gas. So, we broiled it in the oven and it turned out quite well. The only comment I got from my family was with less red pepper, it would have turned out excellent. I agreed it was spicier than I had expected, but over all quite good and filling and you can't beat the low calorie part!

Rated 4 out of 5 by from my whole family enjoyed this meal...the peppers were amazing (and my husband doesn't normally eat... my whole family enjoyed this meal...the peppers were amazing (and my husband doesn't normally eat green peppers) but he said they were "kickin"...we do wish the fish had as much flavor..the few parts that touched the grill were wonderful and had more taste...wondering if we should just put fish directly on grill and put peppers to the side...has anyone tried that?

It was so delicious we made 4 lbs of it, I bake 2 pounds and grilled the other 2..I had green, red and yellow peppers,hot rice to go with it. It was so tender and flavorful. We used tilapia. I totally forgot about the parmesean cheese and cilantro, next time, but didn't matter, everyone loved it...Even our 2 year old twins.

Rated 4 out of 5 by from I enjoyed this recipe. I enjoyed this recipe. It was quite tasty. I used tilapia. It was too cold outside to grill so I tried it on the Foreman grill. It still came out great. The Tilapia did break up a little but it really didn't matter, it still tasted great. Maybe next time I try the oven. I served it with rice and veggies. Great!

Ok, so I have never grilled fish before, but it just looked so good and sounded easy enough. I got a little nervous about just putting the fish on the peppers to grill, so I ended up putting the pepers on foil, then the fish on top of that and I did not flip the fish. It was delicious!! First time a success!

Rated 5 out of 5 by from This recipe is amazing! This recipe is amazing! We used tilapia and broiled it instead, and even forgot to put on the parmesan and cilantro, and it still blew us away. Spicy and fruity at the same time. No fishy flavor at all; the dressing and crushed peppers worked well together. And the bell peppers... *drool* AWESOME!!!!!

Rated 4 out of 5 by from I loved this recipe. I loved this recipe. I broiled it like someone had mentioned in another rating and it turned out really well. Too much pepper!! My wife didn't like it because it was too hot for her. I could eat the peppers that go along with the fish by themselves. I will try it again with less crushed pepper.
