  • Combine first 5 ingredients; spread onto 4 tortillas, leaving 1/2-inch border around edge of each.
  • Cover with remaining tortillas.
  • Grill 2 min. on each side or crisp and golden brown on both sides. Cut into wedges. Serve with yogurt.

Rated 5 out of 5 by from Delicious! Delicious! I added some green onions into the mix for personal preference and I'm glad I did because I made a couple of them without them and the taste was slightly overpowering (Still yummy though.) I plan on experimenting to make it better.

I would definately take the extra time to seed, and chop kalamata olives, it's so much better and makes this recipe superb instead of very good. I used a couple tablespoons of chopped cilantro as a garnish after I grilled the quesadillas - WOW

Rated 4 out of 5 by from Only leave on the grill for 2 minutes on each side. Only leave on the grill for 2 minutes on each side. Dad left it on the grill too long and I thought they were too crunchy. Dad liked them that way. I might put olive oil on the inside of the tortillas before adding the mixture.
