  • Heat grill to medium high heat.
  • Brush cut sides of zucchini and bread with oil.
  • Grill zucchini 3 to 4 min. on each side or until tender. Remove from grill; cool. Meanwhile, grill bread 1 to 2 min. on each side or until golden brown on both sides. Cool 5 min.
  • Combine cucumbers, salsa, parsley and olives in large bowl. Cut zucchini into 1/4-inch-thick slices, then cut bread into 1-inch pieces. Add zucchini and bread to salad just before serving; mix lightly.
