Fun & easy just to stick the pieces on skewers - and have my husband grill them :) Slide the cooked veggies off the skewers into a bowl, dash them with Italian dressing (any "fat free" is great) and sprinkle on the parmesan cheese. Your family will gobble these up! I included pieces of onion (any kind) and also some mushrooms (large, halved). I think I'll add some cherry tomatoes next time too. If some veggies get a little "black" on the edges, don't worry - it tastes even better! This is definitely good enough for company, and skewers can be prepared far in advance. I think maybe for guests, I might just leave them on the skewers & sprinkle on the dressing and parmesan- very festive! We've made these 3 times in 4 weeks. You'll enjoy these!

Rated 5 out of 5 by from Delicious! Delicious! We didn't have our grill hooked up yet so I just used a grill pan on the stove and they were so yummy! I also doubled the parmesan cheese. (we love cheese!) That being said, WARNING: do not make these "ahead of time". Grilled veggies need to be served immediately or they get soggy and mushy. Fresh off the grill though, they are crisp, hot, and mouth watering! :) We will definately make this again!

Rated 5 out of 5 by from Yummy! Yummy! This is a great way to cook veggies. I used a berry vinaigretti dressing for a little twist on the flavor, and it was fabulous! I also put the veggies on skewers for easier handling on the grill. That worked out well, too. I will definitely use this recipe again -- the veggie and dressing variations will be fun experiments for many future meals.

Rated 5 out of 5 by from WOW! WOW!!! This recipe is fabulous. I added sliced portabello mushrooms and a sliced red onion. I also substituted All Seasons Fresh Garlic Italian for the Zesty Italian because I was out of it, but, this makes a great substitute. I will definitely do this recipe again. Many times to come in my home and also for church gatherings.

We added feta cheese along with the parmesan cheese and WOW, the flavor was FANTASTIC and the color combo of the veggies just made this receipe outstandingly delicious!!! YUMMY!

Rated 5 out of 5 by from Delicious and easy. Delicious and easy. I put Kraft Balsamic Vinaigrette on the vegetables while they were grilling (in a grill pan). After topping with Parmesan, I put them in the oven at 250, covered with foil, until the burgers were done. Perfect!

I used potatoes, fresh mushrooms, zucchini, and carrots with lemon, garlic, and herb vinagrette. Great as a side dish with fish. Nice and healthy!!

Rated 4 out of 5 by from A quick and tasty to enjoy vegetables. A quick and tasty to enjoy vegetables. It is also easy to make on a portable grill (such as a George Foreman grill) ~~ equally as tasty cooked inside as on an outdoor grill. Goes well with chicken, salmon, steak and even burgers.
