Very delicious! We eat a lot of salad and I am always looking for new ideas. This one is so simple. We used crumbled blue cheese on top and balsalmic dressing. Although it would be great with blue cheese dressing as well.
This was a fantastic side to the grilled chicken I made. The recipe calls for chopping up whole cashews, which are more expensive than the cashew halves and pieces - just buy the halves and pieces since you have to chop them anyway.
