Grilled Pesto Chicken over Greens

Grilled Pesto Chicken over Greens recipe

Grilled chicken strips, greens, red pepper, olives and pesto dressing are tossed then sprinkled with Parmesan for a delightful summer main-dish salad.

What You Need

cup  KRAFT Italian Pesto Dressing, divided
small  boneless skinless chicken breasts (1 lb.)
pkg.  (10 oz.) mixed salad greens
 red pepper, cut into strips
can  (2-1/4 oz.) sliced black olives, drained
cup  KRAFT Shredded Parmesan Cheese

Make It

HEAT grill to medium heat.

POUR 1/2 cup dressing over chicken in shallow glass dish. Refrigerate 15 min. to marinate, turning after 7 min. Remove chicken from marinade; discard marinade.

GRILL chicken 5 to 7 min on each side or until done (165ºF). Cut into strips.

TOSS greens, chicken, peppers and olives in large bowl. Drizzle with remaining dressing; sprinkle with cheese.

Greek Chicken over Greens
Prepare as directed, substituting KRAFT Greek Vinaigrette Dressing for the Italian dressing and 1/2 cup sliced cucumbers for the red pepper.
