  • Heat greased grill to medium heat.
  • Combine salsa, lime zest and juice. Reserve 1/2 cup for later use. Sprinkle chicken with pepper.
  • Grill chicken 45 min. or until done (165°F), turning occasionally and brushing with remaining salsa mixture for the last 15 min.
  • Meanwhile, bring cucumbers, chiles, cilantro and remaining salsa mixture to boil in saucepan on medium-high heat, stirring frequently. Remove from heat.
  • Serve chicken with salsa mixture.

Keeping it Safe
