Shrimp marinated in olive oil, balsamic vinegar and Italian salad dressing mix are grilled on skewers with red pepper chunks for delicious kabobs.

What You Need

1/3
cup extra virgin olive oil
1/4
cup balsamic vinegar
1
env. GOOD SEASONS Italian Dressing Mix for Fat Free Dressing
1
lb. uncooked deveined peeled medium shrimp
2
 red peppers, cut into 1-1/2-inch chunks
2
Tbsp. chopped fresh basil

Make It

MIX first 3 ingredients in cruet or small bowl as directed on envelope. Pour over shrimp in shallow dish. Refrigerate several hours to marinate.

HEAT greased grill to medium-high heat. Drain shrimp; discard marinade. Thread onto skewers alternately with peppers.

GRILL 5 to 6 min. on each side or until shrimp turn pink. Sprinkle with basil.

Substitute
Substitute green or yellow peppers for the red peppers. Or use a combination of different-colored peppers.
